Louisiana's table as an engine of opportunity — a social-enterprise cafe and culinary training incubator that turns rural kitchens into classrooms, jobs, and community anchors.

Cafe Kountry Gumbeaux is the public face — a working cafe serving Louisiana foodways. Behind it runs the Rural Culinary Incubator: hands-on training in food service, food safety, kitchen management, and small-food-business development for veterans, families, and rural residents.
Trainees graduate with real service hours, industry-recognized skills, and a pathway — a job, a food truck, a catering venture, or a stall of their own — supported through the SEISMIC™ Social Enterprise Incubator.
Cafe revenue recycles into the mission, making this a working proof of the enterprise's earned-revenue strategy (Strategic Plan, Pillar 5).
